Day 4: Chicken Satay (Beginner Group)

Chicken Satay: A Culinary Staple & A Rich Delicious Sauce!

By: Owen Siegel

A Full and Amazing Plate!

Today was the fourth and final day of the first week of Art of Cooking! We all have become much more comfortable with our cooking spaces in this first week, so our preparation for the recipe started and proceeded swiftly. We began by gathering items such as cutting boards and knives to set up our stations. We then gathered ingredients that we would need to make our delicious peanut butter sauce! While preparing ingredients for the sauce, we also cut thin slices of chicken that we would later put on our skewers.

Slicing The Chicken Like A Pro!

While the peanut butter sauce tasted fine, the two groups had sauces with very uneven consistencies, so we combined both and got the perfect sauce!

A Delicious Team Effort

Now that we had finished the peanut butter sauce, we whisked our marinade and thoroughly tossed our chicken with it inside of a plastic bag. We then let the mixture sit in the fridge for a couple of hours, and prepped our sides which included rice and Thai som tam, a cabbage-based salad with a sweet and sour sauce (today really was full of different sauces!). We were able to put our knife skills to use while cutting vegetables for the salad, and we multitasked by preparing boiling water and rice at the same time.

Preparing the Rice

Now that a majority of our cooking was done and our chicken was marinating, many of us took a small break in order to regain some energy and clean our stations! Once we were back to cooking, we began to prepare a basting sauce for chicken legs and breasts that we had marinated yesterday. Soon after mixing the sauce, we were using the grill and cooking our chicken! This was our first time using the grill, so chef Avrille taught us how to flip, baste, and time the chicken. We also grilled a variety of vegetables and corn for those who didn't want/couldn't eat the chicken. The surrounding area smelled amazing while grilling and the finished legs and breasts were delicious and full of flavor.

 Grilling the Chicken!

The Fully Grilled Chicken

Finally, we took our marinated slices of chicken out of the fridge and evenly skewered them. We made sure to use all of the remaining chicken, and quickly cook them on the grill since they were so thin. After the chicken was grilled, we used our peanut butter sauce on the top of the skewers and plated them with our salad and rice. We all enjoyed our delicious meals, and had an amazing conclusion to our first week!
